The very best clusters of grapes are harvested by hand; selected very carefully besides being harvested during their optimal time.
Yearly we perform several crops aiming to enhance and stable the strength and health of every single Iberian vineyard.
Once the grapes arrive at the winery clusters are fed into the de-stemmer, where begins a gentle crushing and destemming to be transferred into the tanks equipped with control temperature system, where begins the alchemical process of the grapes begins.
The fermentation process lasts between 7 and 22 days where the grapes leave their best qualities from their skin such as pigments, aromas, tannins, and polyphenols denominating this process as maceration.
Once the wine is fermented, it goes through a light pneumatic pressing. Right after takes place the second fermentation, where the malic acid turns into lactic acid. Finally, spontaneous malolactic fermentation takes place in stainless steel tanks or casks.
By pouring the wine into our American, French and Hungarian oak wooden barrels, stored in cellars with suitable humidity and temperature conditions, according to every specific needs of storing time, decanting and blending. Additionally, some of our finest wines are stored in bottle racks placed in cellars waiting to be released into the market.
The core of identity present since 1970 across our wines is based not only on the right ageing time and combinations of wooden casks but also on light and humidity conditions allowing the wood to provide tannins and organoleptic properties.
As a result, depending on the roasting of the wood, our wines acquire exquisite hints of smoke, chocolate, vanilla and coffee flavours.
